ZUCCHINI MANICOTTI w/ SRIMU TOFU RICOTTA

Zucchini Manicotti with SriMu Tofu Ricotta
Makes 6 Servings
Ingredients
- 1 batch SriMu Tofu Ricotta (view the recipe here)
- 1 large Zucchini (or 2 small ones)
- ½ tbsp Olive Oil
- ¾ cup Marinara
- Basil for garnish
- Salt and Black Pepper to taste
Instructions
- Make the SriMu Tofu Ricotta
- Thinly slice the zucchini on a mandoline into long, thin strips.
- Brush with olive oil.
- Add a generous dollop of ricotta on top of each zucchini slice and roll it up.
- Top with warm marinara, basil, and salt and pepper.
- Serve and enjoy!
