Zucchini Manicotti with SriMu Tofu Ricotta

Zucchini Manicotti with SriMu Tofu Ricotta

Makes 6 Servings

 

Ingredients

  • 1 batch SriMu Tofu Ricotta (view the recipe here)
  • 1 large Zucchini (or 2 small ones)
  • ½ tbsp Olive Oil
  • ¾ cup Marinara
  • Basil for garnish
  • Salt and Black Pepper to taste

Instructions
  1. Make the SriMu Tofu Ricotta
  2. Thinly slice the zucchini on a mandoline into long, thin strips.
  3. Brush with olive oil.
  4. Add a generous dollop of ricotta on top of each zucchini slice and roll it up. 
  5. Top with warm marinara, basil, and salt and pepper.
  6. Serve and enjoy!
