Golden Gouda Quiche


  • Pie crust of choice
  • 4 cloves garlic, minced
  • 8 oz blue oyster mushrooms
  • 1 cup Spinach
  • 4 eggs equivalent of JustEgg
  • ⅓ cup non dairy milk
  • ½ wheel Gold Alchemy
  • 1 tsp Dijon Mustard
  • 1 tsp fresh thyme plus garnish
  • 1 tsp salt
  • ½ tsp black pepper


  1. Preheat the oven to 350F.
  2. In a large pan, heat the oil on medium heat. When hot, add the oyster mushrooms and garlic. Saute for 4 minutes. 
  3. Add the spinach and stir occasionally until wilted.
  4. Add the SriMu Gold Alchemy and non dairy milk and stir until the wheel is melted into the mushroom spinach mixture and everything is well coated. Remove from heat and allow to cool for 5 minutes.
  5. Add in the salt, thyme, black pepper, and dijon into the mixture.
  6. Stir the JustEgg into the pan and stir. 
  7. Pour the mixture into the pie crust.
  8. Bake for 35-40 minutes, or until set.
  9. Let stand for 5 to 10 minutes. Garnish with thyme and serve.
