CLOUD 9 MOZZARELLA MUSHROOM OMELETTE

This quick and easy omelette is so delicious - definitely a dish to try!
Our Cloud 9 mozzarella adds a creamy touch, paired with the sautéd mushrooms and fresh spinach.

This is a plantbased recipe.
We use JustEgg which is an egg substitute made of mung beans.

 

INGREDIENTS

  • Olive oil
  • Portobello mushrooms
  • JustEgg (an egg substitute)
  • SriMu Cloud 9 mozzarella 
  • Spinach
  • Sea salt
  • Black pepper


DIRECTIONS

  • Heat up some olive oil in a pan
  • Slice the portobello mushrooms 
  • Add the mushrooms + some sea salt to the pan to sauté them
  • Remove the mushrooms from the frying pan once cooked
  • Whisk the JustEgg
  • Add new oil to the heated frying pan and add the JustEgg mixture
  • Flip the omelette once the bottom side has firmed up
  • Chop the spinach
  • Cut the SriMu Cloud 9 into pieces
  • Remove the omelette from the frying pan when cooked on the other side
  • Plate the omelette. Garnish it with the fresh spinach, cooked mushrooms and the Cloud 9 pieces on top. Add salt and pepper.
