CLOUD 9 MOZZARELLA MUSHROOM OMELETTE

This is a plantbased recipe.
We use JustEgg which is an egg substitute made of mung beans.
INGREDIENTS
- Olive oil
- Portobello mushrooms
- JustEgg (an egg substitute)
- SriMu Cloud 9 mozzarella
- Spinach
- Sea salt
- Black pepper
DIRECTIONS
- Heat up some olive oil in a pan
- Slice the portobello mushrooms
- Add the mushrooms + some sea salt to the pan to sauté them
- Remove the mushrooms from the frying pan once cooked
- Whisk the JustEgg
- Add new oil to the heated frying pan and add the JustEgg mixture
- Flip the omelette once the bottom side has firmed up
- Chop the spinach
- Cut the SriMu Cloud 9 into pieces
- Remove the omelette from the frying pan when cooked on the other side
- Plate the omelette. Garnish it with the fresh spinach, cooked mushrooms and the Cloud 9 pieces on top. Add salt and pepper.
