Buffalo Cauliflower Wings with Blue Inspired Dip

Makes 3 servings

Ingredients

  • 1 cups Chickpea Flour (or whole wheat)

  • 2 tbsp Nutritional Yeast

  • 1 tbsp Garlic Powder

  • 1 ½ cups Water

  • 1 tsp Salt

  • 1/2 tsp Mustard Powder

  • 16 oz Buffalo Sauce

  • 2 tbsp Olive Oil

Blue inSpired Dip

  • ½ wheel of SriMu Spire

  • ½ tbsp Apple Cider Vinegar

  • 2 tbsp Non-dairy Milk

  • ¼ tsp Salt

  • Chives or scallions for garnish

Directions

  1. Preheat the oven to 375F. Remove Spire from the fridge and allow it to soften.

  2. Chop the cauliflower into florets. Place in a large bowl and set aside.

  3. Combine all dry batter ingredients in a large bowl. Add water and oil slowly while mixing with a whisk to avoid clumps. Stir until the batter looks smooth and the consistency is similar to a pancake batter.

  4. Pour the batter into the bowl over the cauliflower and toss until all the cauliflower is well covered and you can no longer see any white.

  5. Place cauliflower on a parchment paper lined baking sheet (*see note below for even crispier texture) in a single line so the cauliflower is not touching each other. Place in the oven and bake for 20 minutes.

  6. Remove from oven and flip cauliflower. Return to oven and bake an additional 10-15 minutes until golden brown.

  7. Remove cauliflower from oven and place in the large bowl. Pour the Buffalo Sauce on top and toss until well combined.

  8. Place cauliflower back on the baking sheet and return to oven. Bake an additional 10 minutes. Toss with additional sauce if desired.

  9. Serve with the Funky Blue Dip and garnish with scallions or chives.

*Note: Use an oven safe baking rack or perforated pan (with holes in it) to get a crispier cauliflower wing. Allowing all sides of the cauliflower to be exposed to heat will create a better texture when cooking!
