INGREDIENTS
4 carrots, shredded
1 beet, shredded
1 tsp Himalayan salt
1 cup chickpea flour
1 teaspoon baking powder
¼ tsp fennel seeds
1 tsp cumin seeds
1 tbs garam masala
1 tsp coriander powder
1 tbs ginger root, minced
1 Thai chili, minced
2 tablespoons olive oil
1 SriMu cheese wheel
INSTRUCTIONS
- Mix the carrots and beets with salt and allow the veggies to release their moisture for 5 minutes.
- Squeeze the shredded vegetables to extract moisture in a colander. Discard the water.
- Place the squeezed vegetables in a bowl. Add spices, salt, ginger, chili, baking powder, olive oil and chickpea flour. Knead the mixture until it forms a moldable dough.
- Place a handful of the dough in the palm of your hand and flatten it into a patty. With the help of a small cookie scoop place a dollop of SriMu cheese in the middle of the patty. Add a little more dough and close it encasing the cheese. Repeat until you use all your dough.
- Place the koftas in the air frier, drizzle with a little oil and “fry” for 15 minutes on high or 375 degrees.
- Serve your koftas with cilantro chutney or your favorite Indian spicy sauce.
